Step 1: sauté the avocados

Step 3: the finishing touches

Put the pine nuts in a pan without fat and briefly toast them. Cut the tomato into small cubes and the basil into strips. Finally, all you have to do is sprinkle the seeds, the tomato pieces, the basil and optionally also colored pepper on the finished avocado soup.

1. Pasta with parsley pesto

Noodles are the classic when it comes to quick meals. In addition to tomato sauce, homemade pesto is the ideal accompaniment to pasta. For a quick parsley pesto you will need the following ingredients:

2 bunch of flat leaf parsley 1 bunch of basil 1 tbsp pine nuts 40 g freshly grated Parmesan cheese 100 ml olive oil

In the first step, the herbs are washed off, dried and roughly chopped. Then put the herbs, pine nuts, parmesan and half a teaspoon of salt in a tall blender jar. Slowly pour in the oil and use the hand blender to make a pesto. Finally, add salt to taste. 

Tip: If you omit the parsley and increase the amount of basil, you get classic basil pesto. Instead of herbs, you can also use dried tomatoes and black olives to conjure up a red pesto. You can also experiment with different types of pasta. 

2. Oven pancakes with vegetables and feta

Do you love hearty pancakes, but don’t have time to cook several in the pan one after the other? Then this oven pancake recipe is for you. For a sheet you need:

125 g flour1 teaspoon baking powder4 eggs (size M) 1⁄8 l milk75 ml sparkling mineral water1 tbsp oil2 large carrots1 red pepper1 bunch of spring onions200 g fetaje 1 bunch of parsley and chives 400 g sour cream and pepper 


How to make oven pancakes

Line the baking sheet with parchment paper and drizzle with oil. Push the tray into the oven and preheat it to 200 degrees top and bottom heat or 175 degrees circulating air. Then peel and clean the carrots and peppers. Cut the vegetables into fine strips. After cleaning, the spring onions are cut into fine rings. Crumble the feta.

For the pancake batter, stir together the flour, baking powder, eggs, milk, mineral water and about 1⁄2 teaspoon salt to form a smooth batter. Pour this onto the hot baking sheet and sprinkle everything with vegetables and feta. The pancake is baked in the hot oven for 20 minutes. Meanwhile, wash the herbs, shake them dry and finely chop them. Mix the herbs with sour cream and season with salt and pepper.

Pull the pancake off the baking sheet along with the baking paper. Roll it up from the long side and cut it into pieces, which you serve with the herb sauce. 

3. Chilli sin carne

Chili – whether with or without meat – is ideal for pre-cooking and tastes even better when it is a bit pulled through. For the following recipe you only need 30 minutes and the following ingredients:

Chili: uncomplicated but delicious

Crumble the tofu with your hands or a fork. Cut the onion and garlic into fine cubes. Wash the peppers and cut them into cubes as well. Fry the tofu in a saucepan with a little oil. Add the onions, garlic and pepper pieces and continue frying for a moment. Delete with a little red wine or water if you like.

Now add the strained and chopped tomatoes and let everything boil briefly. Finally, add the drained kidney beans and corn and let the chilli simmer over low heat for 10 to 20 minutes. The longer it draws, the better the flavors can develop. Just before the end of the cooking time, generously season the chilli with the spices. Rice or bread is recommended as a side dish.
